When I moved out of my parents' house, the biggest challenge I had to face was feeding myself. My mom stayed at home, so I was pretty spoiled in that regard. Never had to make any kind of food for myself. When I moved out, she selfishly refused to come over and prepare my supper. So I had to make room in my busy schedule of lounging around and resting my eyes.
I managed alright. Proof is that I haven't gone hungry yet. But now I'm starting to yearn for a more varied menu. So I'm making an effort at spicing up my menu with some new additions. My future mother-in-law timely surprised me with Giada De Laurentiis's new recipe book Weeknights with Giada. My first attempt was straightforward, but quite delicious.
This sandwich is perfect for summer with fresh basil and parsley, and sun-dried tomatoes. The halibut is cooked, shredded, and then mixed with lemon juice, capers and mayo.
